Iran is one of the world's largest producers of dates. South Khorasan Province, on the edge of the Dasht-e Kavir desert, features low rainfall, large temperature swings, and mineral-rich groundwater, nurturing the renowned Mazafati date. K***S Group has over 50 years of date cultivation and trade history, owning farms and cooperating with over 500 growers, producing over 50,000 tons of high-quality dates annually. However, facing intense international competition and rising food safety standards, the limitations of traditional processing became increasingly apparent.
Staggering Losses from Traditional Drying: Despite the dry climate, occasional "desert heat winds" during the harvest (September-October) and night-time moisture regain cause about 15%-20% of sun-dried dates to crack, mold, or crystallize surface sugar, affecting appearance and texture.
Difficulty Meeting Hygiene Standards: Traditional open-air drying yards cannot prevent contamination from dust, insects, and birds. European and East Asian clients have strict limits on mycotoxins and salmonella in dates. Traditional products are often rejected due to high impurity levels.
Product Mix, Low Value-Add: Over 80% of Iranian dates are exported as whole dried fruit, lacking deep-processed products. International demand for pitted dates, date slices, date powder, and organic dates is strong, but local processing capacity is absent.
Coarse Grading: About 20% of harvested dates, due to slightly smaller size, minor blemishes, or harvest damage, cannot enter the fresh market and are sold cheaply in bulk, failing to maximize value.
Unstable Energy Supply: Grid stability is limited in parts of Iran, and natural gas supply is tight, requiring a drying solution adaptable to local energy characteristics.
The client's needs were precise: produce high-quality dates meeting food safety standards, gain the ability to process lower-grade fruit into slices and powder, and adapt to Iran's energy supply situation.
After comparing equipment from the UAE and Turkey, K***S Group ultimately chose our company. Our advantage lay in developing a specialized smart drying and conditioning process for dates, known for their high sugar, thin skin, thick flesh, and browning.
Solution: Three Custom Designs for Desert Oasis Date Characteristics
1. "Hot Air Drying + Steam Conditioning" Smart System
Addressing the challenges of high sugar content, easy crystallization, and hardness after drying, we used staged drying combined with low-temperature steam conditioning technology.
Gradient Drying: Stage 1: 55°C-60°C medium temperature quickly removes surface moisture, preventing sugar fermentation. Stage 2: 45°C-50°C low-temperature slow drying maintains flesh softness and prevents internal sugar crystallization.
Steam Conditioning: In the final stage, low-pressure steam is introduced, softening the skin and moisturizing the flesh, achieving an ideal "dry outside, soft inside" texture with a shiny, resilient surface.
Intelligent Grading: An integrated vision grading system automatically sorts dates by size, color, and skin integrity. Lower-grade fruit is directly conveyed to the date slice processing line.
2. Flexible Processing for Different Products
For Whole Export Dates (premium core): Single-layer flat drying maintains fruit integrity. Finished dates have a glossy dark reddish-brown skin, soft, non-sticky flesh, and controlled moisture (22%-25%), meeting European import standards.
For Ready-to-Eat Date Slices (high-value product): Lower-grade and broken dates are pitted and sliced, then dried at 45°C-50°C for 4-6 hours. The resulting fan-shaped slices have natural color and concentrated sweetness, used as healthy snacks and in baking.
For Organic Date Powder (functional food): Low-grade dates and processing scraps are pitted, mashed, and dried via drum or spray dryer. The powder retains natural fructose, dietary fiber, and minerals, used in powdered drinks, energy bars, and baby food.
3. Multi-Energy Adaptable System
Addressing Iran's tight natural gas supply but abundant desert solar, we designed a "Solar Preheating + Natural Gas/Biomass Dual Fuel" system for the drying line.
Daytime: South Khorasan's intense sunlight preheats ambient air to 45°C-50℃ via solar collectors, reducing energy consumption by 30%.
Equipped with a biomass gasifier, it can use abundant local date pits and pruned branches as backup fuel, completely reliance on the grid and natural gas.
